Pork Stew

 

Cullen's Pork Stew

 

3 tbs minced garlic  
3 tbs curry powder
2 tbs cumin            
1 tbs paprika
1 tbs cayenne powder 
2 lbs boneless butt or picnic shoulder cut into 1 inch cubes
5 tbs olive oil, divided   
salt & pepper     
2 red peppers thinly sliced
3 tbs fresh minced ginger  
3 plum tomatoes, cored and diced
1/4 cup soy sauce
11/2 cups unsweetened coconut milk
1 cup dry white wine    
1/4 cup chopped of each, basil, mint and cilantro 
1/2 cup roughly chopped  
 unsalted peanuts   
3 tbs fresh lime juice
5 dashes Tabasco sauce 
1 tsp brown sugar


In a large bowel, combine garlic, curry power, cumin paprika, salt & pepper and cayenne. Sprinkle pork 
with mixture. In large pot heat 3 tbs oil over medium high heat add pork and brown all sides. Transfer meat and 
discard oil add 2 tbs oil to pan over high heat, add onion and sauté about 11-13 min. Add ginger and tomatoes 
stirring 2 min. return meat to pan, add soy, coconut milk and wine bring to a boil, skim any film off surface
 and simmer11/2 -2 hours until meat is tender. In a small bowel mix basil, mint, cilantro, peanuts, Tabasco,
lime and brown sugar. Place helpings of stew in bowel and garnish with mixture.
