Cullen's Greek Potato Salad

 

8 white or yellow potatoes, cooked, peeled and sliced or diced
1 small red onion fine chopped
8 ounces Feta cheese with basil and tomato
mayonnaise to bind
salt and pepper to taste
5 fresh basil leaves fine snipped
Crumble feta cheese into a large bowl. Add potatoes, onion and snipped fresh basil leaves. Mix and bind all together with mayonnaise. Salt and pepper to taste. Place in serving bowl. Cover and chill well.
