Lynn's French Potato Salad
4 potatoes -- cubed
2 tablespoons olive oil
1 1/2 tablespoon white vinegar
1 tablespoon water
1 tablespoon Dijon mustard
1/4 teaspoon black pepper
1/2 cup green onion -- sliced
3 tablespoons fresh parsley -- chopped
1 tablespoon fresh tarragon -- chopped
salt -- to taste
In medium saucepan, cook potatoes, covered, in 2 inches of boiling water just
until tender, about 15 minutes. Drain and cool potatoes. In large bowl, whisk
oil, vinegar, water, mustard and pepper. Mix in onions, parsley and tarragon.
Add potatoes; toss lightly to coat. Season with salt. Chill.
