Granny's Greek Potato Salad

 

4 medium potatoes, unpeeled
Salt
1/2 cup sliced green onions
1 teaspoon oregano, or to taste
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons wine vinegar or juice of 1 lemon
1/3 cup olive oil
2 hard-cooked eggs, chopped (optional)
Scrub potatoes. Cook in salted, boiling water 30 to 40 minutes or until tender. Peel and dice potatoes.

Add green onions, oregano, salt, pepper, vinegar, olive oil and chopped eggs. Mix gently. Chill.
