Kat's Greek Potato Salad Lemon Dressing

 

3 med Potatoes, slice 1/4" thick, boiled until tender
1 1/2 oz sun-dried tomatoes, chopped
1 cup seedless cucumber, sliced (also called English cucumber)
1/2 cup red onion, sliced
4 oz feta cheese, crumbled ( I like to use a bit more, I love feta)
1/2 cup Greek olives, pitted
1 x clove garlic, minced
1 tbl fresh oregano or 1 tsp dried.
    Salt and pepper to taste
LEMON DRESSING:
1 cup olive oil, extra virgin
2 1/2 tbl lemon juice
4 x cloves garlic, minced
1/4 cup fresh oregano, chopped or 2 tsp dried oregano
    Salt and pepper

 Method :
Mix salad ingredients. Mix dressing ingredients, pour over salad and toss gently so as not to break up potatoes too much.
