Lynn's Mom Potato Salad

 

5 to 6 pounds potatoes
2 large bundles radishes
4 - 6 eggs
1/2 cup sweet onions
2 cups chopped meat
1 teaspoon mustard
2 to 3 tablespoons mayonnaise
2 to 3 tablespoons pickle juice
6 - 7 pickles chopped
2 - 3 green onions
1 large green pepper
3 celery sticks chopped fine
2 tomatoes
1 head lettuce

Set aside some of the radishes, tomato, pickles, green pepper and eggs for garnishing the salad.

Cook and dice potatoes.

Mix mayonnaise, mustard and pickle juice together, add to diced potatoes.

Cut up everything else and add to potato mix, let sit for an hour before serving.

Put head of lettuce on a large plate, add potato salad.

Make flower radishes and wedges of tomatoes. Wire pickles, green pepper and eggs. Garnish top of salad
