Granny's All American Potato Salad
3/4 pound red potatoes, washed
2 tablespoons white vinegar
2 tablespoons Dijon mustard
2 teaspoons canola oil
1/3 cup snipped fresh chives or minced sweet onion or green onion
1/3 cup diced celery
Salt
Freshly ground pepper
Cut unpeeled potatoes into 1/2 to 3/4-inch pieces. Place in saucepan; cover with
cold water. Simmer 10 minutes or until cooked through.
Remove 2 tablespoons cooking water from saucepan. Add to serving bowl; mix with
vinegar, mustard and oil. Stir in chives and celery. Drain potatoes; add to the
bowl. Add salt and pepper to taste. Toss well to coat potatoes
The
