Shanna's Calico Potato Salad

 

4 potatoes, cooked and sliced
10 ounces frozen peas, cooked
Herbed mayonnaise (see below)
4 hard cooked eggs, sliced
2 ounces anchovy filets
Capers (if desired)
20 oz.frozen cut green beans
or
1 1/2 pound fresh cooked
1 head lettuce
1 can asparagus spears
or
1 pound fresh cooked
3 tomatoes, quartered
Green and black olives
Chopped parsley
Mix potatoes, greens and peas with mayonnaise. Line large salad bowl with romaine. Place vegetables in center. Surround sides of bowl with asparagus, eggs and tomatoes.

Garnish with anchovies, olives and capers. Sprinkle parsley all over.

Note: Any vegetables may be substituted for the ones above.

Herbed Mayonnaise To 1 cup of mayonnaise add 1 tsp. dill seed, 1 tbsp. chives, and 1/4 clove garlic, crushed.
