James's Tuna Pasta Potato Salad
6 Yukon gold potatoes
1 cup raw elbow macaroni
2 cans albacore tuna, drained and fork shredded
mayonnaise to taste
Dijon mustard to taste ( tsp or so )
salt, pepper
fresh chopped parsley to taste
1 tablespoon fine chopped red or white onion
Cook potatoes by favorite method and when cool, peel and dice. While potatoes
are cooking, cook macaroni, rinse and drain. Combine the warm potatoes, warm
macaroni, tuna, parsley, onion and combine with desired amount of mayonnaise
seasoned a bit with the mustard and salt and pepper. Serve warm or chilled.
Note: albacore tuna gives the best flavor in this salad compared to other types
of tuna Cut recipe in half if desired.
