Cullen's Parsley Potato Salad

 

4 medium potatoes, peeled, boiled and diced
1/2 cup parsley, chopped
1/3 cup green onions, chopped
1 clove garlic, crushed
3 tablespoons olive oil
2 lemons, juiced
Salt, to taste
Lettuce leaves
Tomato wedges
In large bowl, mix potatoes with remaining ingredients; mix well. Chill; serve on bed of crisp lettuce and garnish with tomatoes
