Shanna's Sweet Potato Salad


Makes 4 eight ounce servings
3 large sweet potatoes, cut into steak fry strips                   
 2 tbsp. olive oil
Salt and pepper to taste 
1 bunch scallions, greens only, chopped
1 ½ tbsp. apple cider vinegar   
Preheat oven to 425 degrees. 
Put potatoes in a large baking dish: drizzle with olive oil and sprinkle with salt and pepper. 
Bade about 40 minutes, until lightly browned and slightly soft. 
Combine cooked potatoes with vinegar and scallions in a serving dish.
