Cullen's Yam Fruit Potato Salad
3 medium yams, cooked
or
1 (17 0z.) can yams
2 firm bananas
2 red apples
2 cups seedless grapes
1 cup mayonnaise or salad dressing
1 tablespoon honey
1 tablespoon lemon juice
Peel and cube the yams, or drain the canned yams and cube.
Slice the bananas, dice unpeeled apples, and add grapes; toss together lightly.
Combine mayonnaise, honey and lemon juice for dressing.
Serve on crisp cabbage leaves or lettuce with the honey dressing
