Shanna's Ground Chicken Mexicali Burger
2 lb ground chicken
1 cup Atkins Bread Crumbs
3 x green onions chopped
2 x garlic cloves pressed
1 x egg beaten
3 tbl chopped fresh cilantro divided
1 tbl ground cumin
1 tsp salt
1/2 tsp chili powder
1 cup green salsa
1 med avocado peeled, pitted,
and cubed
2 tbl vegetable oil
Method :
Combine chicken, bread crumbs, green onions, garlic, egg, 1 tablespoon of the
cilantro, cumin, salt and chili powder in a bowl. Mix well and shape into four
1-inch-thick patties. Place on a plate, cover and refrigerate 1 hour.
Meanwhile, mix salsa, avocado and remaining cilantro in a bowl and set aside.
Heat oil in a large skillet over medium-low heat and cook burgers 7 minutes on
each side, until browned and cooked through. Serve with salsa mixture.
