Poultry Quesadillas

Turkey Quesadillas
8 8 inch flour tortillas
1/2 small onion thinly sliced
1 zucchini halved and sliced
1/2 can green chilies sliced
1 jalapeno finely minced
1 1/2 cup cooked turkey 12 oz.
1 cup grated Monterey Jack cheese
2 tbs chopped cilantro
To taste; picante or other sauce
Srpay a cookie sheet with oil and place 4 tortillas on it.
Coat a medium sauté pan with oil; sauté with onions and zucchini for 1
min. and let cool and then
spread the vegetables on the tortillas, sprinkle with turkey, cheese and
cilantro. Cover each with another tortilla.
Bake in 350 oven 6-7 min.
