Celestial Chicken Salad
4 cups diced cooked chicken
2 cups diced celery
1/4 cup chopped olives
1 41/2 oz jar whole mushrooms, drained
1/2 pecan halves toasted
4 slices crumbled fried crisp bacon
1 cup mayo
1 cup sour cream
2 tbs lemon juice
Salt & pepper
Combine chicken, celery, mushrooms, pecans and bacon in a bowl.
Blend mayo with remaining ingredients. Add to chicken and toss lightly.
To toast pecans , place in shallow baking pan in a preheated 350F oven for
15 mins
