Poultry & Egg Salads
James's Curried Chicken Salad
3 whole boneless chicken breasts
4 ribs celery, quartered
1 medium onion, coarsely chopped
3 tablespoons curry powder
1 tablespoon salt
1 1/2 teaspoons fresh ground black pepper
Salad:
3 cups chopped cooked chicken
1 cup chopped celery
1/2 cup cubed unpeeled apple
1/4 cup raisins
1/4 cup roasted peanuts, coarsely chopped
1 cup mayonnaise
1 teaspoon curry powder
1/2 teaspoon salt
1 teaspoon cider vinegar
1/2 teaspoon fresh ground black pepper
1/8 teaspoon ground red pepper, cayenne
For the chicken, place it in a large pot and cover with water. Add the celery,
onion, curry powder, salt and pepper. Boil gently, covered, for approximately 20
minutes, or until cooked through. Remove the chicken, cool, and cut into
bite-size pieces.
For the salad, mix together the chicken and remaining salad ingredients in a
large bowl. Cover and refrigerate until serving time.
