Poultry Stew

 

Kat's Turkey Stew

 

1 1/4  lb  Uncooked turkey breast, skinned, all visible fat removed 
1/4  cup  Flour 
3  Tbsp  Acceptable margarine 
2  cloves  Garlic, minced 
2  cups  Low-sodium chicken broth 
1 1/2  cup  Sliced carrots 
1 1/2  cup  Sliced celery 
1  cup  Green peas 
1  tsp  Fresh lemon juice 
  Freshly ground black pepper to taste 


Rinse turkey breast and pat dry. Cut into 1/2 inch cubes and dredge in flour.
Melt margarine in a large pot over medium heat. Add turkey and saute until lightly browned, about 4 to 5 minutes. Add garlic and cook 1 to 2 minutes.
Add chicken broth, carrots and celery. Bring to a boil.
Reduce heat and simmer 45 to 60 minutes. Add peas and cook 5 additional minutes.
Add lemon juice and black pepper and serve.
Yield: Serves 6
