Lynn's Après Ski Turkey Stew

(Serves 4)

I N G R E D I E N T S

1 1/2 lbs turkey thighs, boned, skinned, and cubed
1 Tbs vegetable oil
1 tomato, cut into chunks
1 green bell pepper, thinly sliced
1 clove minced garlic
2 Tbs lemon juice
1 tsp Italian seasoning
1/2 tsp salt
1/8 tsp pepper
2 1/2 tsp cornstarch
3 Tbs cold water

D I R E C T I O N S

In large saucepan, over medium-high heat, saute turkey in oil until all sides are browned. Add tomato, green pepper, garlic, lemon juice, seasonings, salt, and pepper. Cover, reduce heat to low and simmer about 12 minutes or until turkey is done. Mix cornstarch and water in a small bowl. Stir into hot turkey mixture and cook until thickened. Serve over hot rice.
