Tex-Mex Pot Roast
non-stick spray

1 2-21/2 lbs bottom round roast
1 141/2ox can stewed
tomatoes
1/2 cup onion chopped
3-4 tesp chili powder
salt & pepper
1/4tesp ground
cinnamon
2 minced garlic cloves
3 cups hot cooked rice or noodles
spray a large pot with oil. Preheat over medium heat. Brown roast on all sides
drain off fat. Stir together undrained tomatoes, onions, chili powder, salt,
pepper
cinnamon, garlic. Pour over meat and bake covered @ 325 11/2 to 2 hours or
meat is
tender
