  Granny's Pork Pot Roast

 

1 3-4 pork roast tied                                                       
 salt & pepper
11/2 cup celery in 1/2 in cubes                                         
11/2 cups carrots diced
11/2 cup onions diced                                                      
2 cups apple cider
1 tesp fresh thyme leaves                                                 
5 juniper berries
3 apples peeled and cut into 8th                                       
2lbs Yukon potatoes peeled & quartered
2 tbs vegetable oil

Preheat oven to 300 and salt & pepper pork. In a large pot with tight lid heat vegetable oil over high heat. Brown the meat on all sides and remove from pan. Add the celery root, carrots and onions stirring until brown about 5 min. Add the cider, thyme, berries and bring to a boil add meat, transfer pot to oven and cook for 2 hours. Add apples and potatoes and cook till potatoes are tender about 40 min.
