               Lynn's Special Roast

 

                    

3 slices bacon                                                                                
1 3-4 lb bottom round roast
1 large onion diced                                                                         
3 cloves chopped garlic
1 cups diced carrots                                                                       
1 cup diced celery
2 cups red dry wine                                                                        
1 20oz can tomato puree
4 cups water                                                                                   
2 package brown gravy mix
2 bay leaves                                                                                    
1 tbs dried thyme
1 tbs fresh rosemary                                                                         
salt & pepper

Cook the bacon until crisp and remove from pan. Brown the roast on all sides in bacon grease and
 remove from pan .Add onion, garlic and sauté 2 min.. Add wine and deglaze. Return meat to pan with
 remaining ingredients making sure enough liquid to cover meat. Simmer covered 21/2-3 hours or till tender.
