Kat's Avocado Stuffed Potato

3 potatoes
1 cup sour cream
1 cup diced avocado
2 teaspoon salt
fresh ground black pepper to taste
butter


Bake potatoes in preheated 375 degrees oven until done. Half the potatoes lengthwise and scoop out the inside carefully. Retain skins. Whip the potato pulp with sour cream, avocado, salt and pepper. Fill the potato skins. Add bits of butter on top, and bake in preheated 375 degrees oven for about 10 minutes or until lightly browned.
