Sweet
Potatoes
2 large sweet potatoes
1/4 cup butter
1/2 cup packed brown sugar
1/4 cup orange juice
1/4 cup raisins
1/4 cup chopped pecans
1/2 teaspoon cinnamon
Boil cut-up sweet potatoes until fork tender.
Melt the butter, cinnamon, and brown sugar together in a sauce pan over
medium heat. Add orange juice and stir until smooth. Add the sweet potatoes and
cook slowly, turning occasionally until the sweet potatoes are caramelized,
about 20 minutes. If syrup is too thin, add a more brown sugar. Garnish with the
raisins and nuts.
