Fried Sweet Potatoes

1 1/2 to 2 lbs sweet potatoes or yams

5 tablespoons butter
It is better to purchase large potatoes. They make a nice slice.
They can be sliced on the bias or in a round slice 1/8 inch thick.
Heat a 9- or 12-inch heavy skillet. Add butter and when the foaming stage
is reached toss in the sweet potatoes. Cover and adjust the heat to avoid
burning.
After 4 to 5 minutes of cooking uncover and turn the potatoes over.
Put the cover back on and cook until tender, another 4 to 5 minutes.
Uncover and leave to dry out and most of the slices will become glazed and
golden in color
You must continue to gain expertise, but avoid thinking like an
expert.
