Potatoes Hash Brown

2 tablespoons olive oil
2 tablespoons butter
1 large onion, peeled & sliced
1/8 teaspoon cinnamon
pinch allspice
5 medium sweet potatoes, cooked, peeled, diced, (1/3-inch cubes)
1/4 cup fresh chopped parsley
Heat a large frying pan and add the oil, butter, and onion. Sauté for a
few minutes until the onion is clear, then add the spices and salt and
pepper [to taste]. Add the diced potatoes and sauté until lightly browned.
Toss with the parsley just before serving.
Serves 6 to 8.
If I wanted to become a tramp, I would seek information and
advice from the most successful tramp I could find. If I wanted to become a
failure, I would seek advice from people who have never succeeded. If I wanted
to succeed in all things, I would look around me for those who are succeeding,
and do as they have done.
