James's Holiday Yam Bake
1 can (40 oz.) yams, drained
1 can (8 1/2 oz.) crushed pineapple & juice
2 tbsp. light brown sugar
2 tbsp. melted butter
3 tbsp. chopped pecans
3/4 c. miniature marshmallows
Drain yams. Mash well. Drain pineapple and reserve juice. Add juice to yams,
sugar and butter. Beat well. Stir in pineapple and pecans. Coat inside of 1 1/2
quart casserole with Pam. Spoon in mixture. Bake for 20 minutes at 350 degrees.
Sprinkle with marshmallows. Bake 10 minutes longer.
Infatuation is when you think he's as sexy as Robert Redford, as smart as
Henry Kissinger, as noble as Ralph Nader, as funny as Woody Allen, and as
athletic as Jimmy Conners. Love is when you realize that he's as sexy as Woody
Allen, as smart as Jimmy Connors, as funny as Ralph Nader, as athletic as Henry
Kissinger and nothing like Robert Redford -but you'll take him anyway.
