Lynn's Rabbit Patties
1 sm Rabbit boned, ground
1 x Onion minced
1 x Egg beaten
1/2 cup Bread crumbs
1 1/2 tsp Ground ginger
1/2 cup Flour seasoned with
1 tsp Salt and
1/2 tsp Paprika
4 tbl Sweet butter
Method :
Blend rabbit, onion, egg, bread crumbs, and ginger into 4 patties. Dredge
patties with seasoned flour and brown quickly in butter to form a crust on both
sides. Pour on your choice of sauce, cover, and bake at 350 degrees for 45
minutes. Raise heat to 400 degrees to brown for 15 minutes.
This recipe yields 2 servings.
