James's Rabbit & Cream Gravy

 

1 x Young rabbit cut into pieces 
1/2 cup Flour seasoned with 
2 tsp Salt and 
1/8 tsp Paprika and also 
1 dsh Cayenne pepper 
1/2 cup Bacon drippings 
    Cream Gravy see Nancy's Cream GravySC11
 Method :
Dredge meat with seasoned flour. Cook in hot but not smoking fat until golden brown on all sides. Reduce heat and cook slowly for 30 to 45 minutes, until tender, depending on size. Serve with Cream Gravy if desired.
This recipe yields 4 servings.
