Red
Onion & Cherry Chutney
This is a delicious savory marmalade, to serve with cold meats
or warm fish. It has a lovely rich sweet and sour flavor.
1.5 kg red onions
5 tbsp olive oil
1 tsp salt freshly ground black pepper
2 fresh bay leaves
1 packet fresh thyme
125 g light muscovado sugar
75 g pack semi-dried cherries
375 ml red wine
4 tbsp sherry vinegar
1. Peel and thinly slice the onions.
2. Heat the oil in a large pan, add the onions, cover and cook
very gently for 30-40 minutes. Stir occasionally until they soften but do
not brown.
3. Add the remaining ingredients. Stir well. Bring almost to the boil,
reduce the heat and cook gently, uncovered, for 1 1/2 hours,
stirring occasionally, until there is almost no liquid and the mixture is dark
and glossy.
4. Remove the bay leaves and spoon the marmalade into sterilized jars.
Allow it to cool completely before sealing and storing in the fridge.
