Relish & Chutney

 

 Lynn's Orchard Chutney



Experiment with the variety of apple for this chutney, 
that goes well with a piece of Stilton!


350 ml pickling vinegar
500 g soft light brown sugar
1 tsp mustard seeds
1/2 tsp ground cinnamon
1/2 tsp salt
1/2 tsp paprika (or more to taste)
1 kg apples
250 g dried fruit
125 g ripe plums
1 large onion


1. Peel, core and chop the apples, stone and chop the plums, chop
 the dried fruit and onion, and crush the mustard seeds.

2. Put the vinegar, sugar, mustard seeds, cinnamon, 
salt and paprika into a stainless steel pan and bring to the boil.

3. Add the vegetables and fruit, cover and boil gently for about 30 minutes, stirring occasionally. 
Take the lid off for the last 5-10 minutes to reduce liquid slightly if necessary.

4. When it has reached the desired consistency, pour into hot sterilized
 jars and cover with vinegar-proof tops. Store in a cool, dark place for 2-3 weeks before using.
