James's Red Hot Tomatoes Chutney
Beware - this is a pretty spicy chutney! If you can't stand the heat,
omit the chili peppers.
450 g ripe tomatoes
450 g cooking apples
225 g onions
225 g sultanas
225 g crystallized ginger
1 tsp salt
6 chilli peppers
225 g sugar
600ml vinegar
1. Skin and chop the tomatoes, apples and onions, and finely chop the chilli
peppers.
2. Place all of the ingredients in a large pan and bring to the
boil.
Simmer for about 1 hour, or until the mixture has turned thick and brown.
3. Spoon into warmed jars and seal tightly. Store in a cool dark
place for about 2 months.
