         Lynn's  Green Tomatoes Chutney



You can increase the amount of cayenne if you want extra kick!
Tastes delicious served simply with bread and butter.


1.3 kg green tomatoes
4 large apples
2 small dill / cucumbers
3 large onions
175 g sultanas
300 g brown sugar
2 tbsp sugar
2 tsp ground ginger
1 tsp cayenne pepper
2 tbsp salt
700ml white vinegar


1. Remove stalks from tomatoes, slice and peel the onions and apples. Slice the cucumbers.

2. Put all the ingredients into a heavy based pan and bring to the boil. Reduce the heat and
simmer for 2-3 hours or until soft and pulpy, stirring frequently. There should be no excess liquid
 when pulling a wooden spoon through the mixture.

3. Put into warmed sterilized jars. Seal firmly.
