Banana Chutney
This is a lovely and rich exotic chutney
that you could serve with any Indian dish.

16 bananas
900 g onions
450 g dates
225 g chopped crystallized ginger
1 tbsp salt
1.2 litres spiced pickling vinegar
450 g sugar
1. Slice the bananas, finely chop the onion and stone and mince the dates.
2. Put all the ingredients apart from the sugar into a large pan and
gradually bring to the boil. Boil for 5 minutes.
3. Turn the heat down and stir in the sugar, and simmer
over a low heat for about an hour or until rich and brown.
4. Spoon into sterilized jars and seal firmly.
Store in a cool dark place for 2-3 weeks to let flavors mature.
