James's Fig Relish

 

1/2 cup finely chopped onion
8 large fresh ripe Mission figs, finely chopped or about 20 Celestes
1 or 2 fresh Serrano chilies
1/2 cup fresh mint leaves
1/4 cup fresh lemon juice
1tsp salt and black pepper

Soak the onion in ice water 10 mins. rinse and pat dry. Combine the onion, figs and half the chilies in a bowl. Blanch mint leaves in boiling water for 1 min. cool in ice water, drain and finely chop and add to fig mixture. Add rest of ingredients. Let set 1 hour.
