Lynn's Pineapple Chutney
1 medium onion, diced
2 tablespoons ginger, small dice
6 jalapenos, diced
1 tablespoon cumin, toasted and ground
1/2 cup rum
1 pineapple, diced
1/2 cup fresh lime juice
1/2 cup raw sugar
1/4 cup cilantro, chopped
Salt and fresh ground pepper
In saucepan over medium heat, saute onions, ginger,
jalapenos, and cumin for 6 minutes. Add rum, cook until almost all is
evaporated. Add pineapple, lime juice, and sugar, bring to simmer and remove
from heat. Add cilantro, salt and pepper, to taste.
Because we can expect future generations to be richer than we
are, no matter what we do about resources, asking us to refrain from using
resources now so that future generations can have them later is like asking the
poor to make gifts to the rich.
