Cullen's Sweet Chow Chow Relish
A really easy and delicious blend of vegetables - and you can eat it
straight
away if you wish! Serve on burgers and hot dogs.
2.4 litres shredded or grated cabbage (about one medium head)
125 g finely chopped onions or shallots
125 g chopped red bell peppers
2 tbsp salt
500 ml white distilled vinegar
375 g sugar
2 tsp dry mustard
1 tsp ground turmeric
1/2 tsp ground ginger
2 tsp celery seeds
2 tsp mustard seeds
1. Combine all the chopped vegetables and sprinkle with the salt.
Let stand for 5 hours in a refrigerator. Rinse and drain well.
2. In a large bowl, combine the vinegar, sugar and
mustard and spices, and
simmer for 10 minutes.
3. Add the vegetables to the vinegar mixture and simmer for another
10 minutes. Bring to the boil, then pack while still boiling hot into sterilized
jars leaving 2cm space at the top. Seal firmly, leave to cool and then store in
the refrigerator.
