Kat's Cranberry Ginger Relish
Cranberry-Ginger Relish
1 cup fresh or frozen cranberries
1/4 cup packed light brown sugar
1/4 cup finely chopped celery
2 T. finely chopped onion
1 T. finely chopped ginger root
1/4 cup cider vinegar
2 T. water
2 tsp. Dijon - style mustard
In a small saucepan over high heat, combine all ingredients & bring to a
boil. Reduce heat, stirring, simmer until thickened, about 10 minutes. Serve
warm, or refrigerate & serve cold. Makes 1 cup relish
