Lynn's Simple Corn Relish



You can use frozen corn for this recipe - make sure they are
  well defrosted and drained. Tastes great on a burger!

280 g frozen corn kernels - defrosted and drained
1 tsp cumin seeds
1 small chopped red onion
125 ml cider vinegar
60 g sugar
2 tsp fresh oregano
dash of hot pepper sauce
1/2 tsp salt
1 red bell pepper, cored, seeded, and diced
generous handful chopped coriander / cilantro

1. Put cumin seeds in a large pan and cook for about 
1 minute, or until aromatic.
Add the chopped onion, vinegar, sugar, oregano, pepper sauce and salt. 
Bring to the boil and simmer for 5 minutes.

2. Add the corn and bell pepper, and simmer for a further 4 minutes until corn is cooked.

3. Spoon into sealable container, seal and store in the refrigerator. 
Stir in the coriander just before serving. Use within 1 week.

Always behave like a duck -- keep calm and unruffled on the surface but paddle like the devil underneath.
