Special Day Crab Rice
- 3 tablespoons butter
- 2 cups uncooked rice
- 1 bunch green onions, chopped
- 2 tomatoes, peeled and chopped
- 3 cloves garlic, mashed
- 2 tablespoons minced fresh parsley
- 2 peeled green chiles, chopped
- 1/4 cup finely chopped celery
- 1 pound backfin crab meat
- 4 1/2 cups water
- salt and pepper
Preparation Instructions:
Fry rice lightly in butter in a large kettle. Add all other
ingredients and simmer 30 minutes, or until all liquid has been absorbed. Serves
