Cheese Rice
1 tablespoon margarine
1 cup chopped onion(1 small)
1 cup Long or Medium Grain Rice (raw)
2 cups chicken broth
1 (4 oz) can chopped green chilies
1 cup grated cheddar cheese
1 tomato, chopped
3 sprigs fresh cilantro, chopped
Melt margarine over medium heat in a large skillet. Add onion and cook until
tender. Add rice, broth and green chilies. Bring to a boil, reduce heat, cover
and simmer 20 minutes. Remove from heat. Stir in cheese and tomato, Garnish with
cilantro
Life doesn't have to be perfect to be wonderful.
