Calamari Risotto

large squid, cleaned
1 (5.7 oz) box isotto, tomato basil flavor
1 large tomato, chopped
2 tablespoon parsley, minced
1 clove garlic, crushed
1/2 teaspoon grated lemon rind
Cut
squid into 1-inch square pieces. Set aside. Prepare risotto according to package
instructions. Combine tomato, parsley, garlic and lemon rind in a bowl and set
aside. Stir squid into hot risotto during the last minute of cooking. Remove
from heat and stir tomato-parsley mixture into risotto until blended
