Lynn's Pineapple Rice

 

1 tablespoon butter
1 clove garlic, finely chopped
1 (14-1/2 oz.) can chicken broth
1 (8 oz.) can crushed pineapple, undrained
pinch salt
pinch ground black pepper
1 heaping cup long grain rice

Melt butter or margarine in a 2-quart saucepan over Medium-High heat. Sauté garlic 1 minute. Add broth, pineapple with juice, salt and pepper. Stir and bring to a boil. Add rice and cover tightly. Reduce heat to Low and simmer 20 minutes or until liquid is absorbed. Fluff with a fork and serve
