Granny's Fried Rice With Vegs

 

5 slices bacon
1 cup sliced green onion
1 cup sliced celery
3/4 cup diced green pepper
3 cups cooked rice
1 canned tomatoes drained
2 tablespoons soy sauce
2 eggs, beaten


1. Cook bacon in large skillet over Medium-Low heat until crisp. Drain on paper towels.

2. Pour off drippings; return 2 tablespoons to skillet. Add onions, celery and pepper to skillet; cook over Medium heat until tender crisp.

3. Stir in rice, tomatoes and soy sauce; heat thoroughly.

4. Pour in eggs and cook, stirring constantly, until eggs are done. Stir in crumbled bacon.
