Pharonise Mushroom Pilaf

 

2 tablespoon butter or margarine
1 small green pepper, diced
1 teaspoon minced garlic
1/2 pound fresh mushrooms, sliced or one 28 ounce can sliced mushrooms, drained
1 can (8 oz) tomato sauce
21/2 cups Long Grain Rice, uncooked
3 cups chicken or beef broth
1 1/2 teaspoon salt
1/4 teaspoon black pepper


Melt butter in large skillet. Add green pepper, garlic and mushrooms; cook 5 minutes, stirring often. Add tomato sauce, rice, broth, salt and pepper. Stir once. Bring to a boil, cover, reduce heat and simmer 20 minutes, do not stir. Stir gently with fork before serving.
