Tex Mex Rice & Beans

 

  Kat's Frijoles   Borrachos  

 

1 lb pinto beans
1 glove garlic
2 tsp salt
1/2 cup cilantro chopped
1/2 lb fine ground chorizo (Mexican sausage)1/2 cup water
1 medium tomato sliced
3 Serrano's
4 oz flat beer
To taste; picante or other sauce 

Wash beans, place in a pot and cover with 2 inches water. Bring to a boil and boil rapidly
for 8 mins. Remove from heat and let stand 1 hour. Put back over medium heat, and add water
and cook for 2to 3 hrs, or until soft and soupy. Separately, brown chorizo for about 15 min
Boil tomatoes slices and peppers in water 10 min. Then blend in blender until smooth
mix with chorizo and simmer for about 5 min. Remove garlic and add chorizo to beans.
 Add beer, simmer 15 min
