Tex Mex Rice & Beans

 

James's Cowboy Beans



1 pound dried pinto beans
1 14 oz can whole tomatoes
1 1/2 medium onions -- chopped
1/4 to 1/2 cup barbecue sauce -- tomato-based
2 to 3 slices slab bacon -- chopped
3 Tbs chili powder, homemade or Gebhardt'sŪ
2 tbs Worcestershire sauce
4 cloves garlic -- minced
3 to 4 Serrano peppers or 2 to 3 Jalapenos -- minced
2 tsp cumin powder
Salt & pepper
Put all in pan, cover with enough water to be 2 inches over beans. 
Cover and bring to a boil, boil 5 mins. Cut off heat and let stand 1 hr.
Then simmer. Cook slowly, stirring up from the bottom occasionally, for at least 2 hours, adding more water if the beans begin to seem dry.
