Tex Mex Rice & Beans

 

Pharonise Spanish Rice

 

5 tbs bacon drippings
3 cloves garlic
1 cup rice
1 6 oz can tomato paste
1 can tomatoes
1/2 med onion chopped
2 tbs cumin powder
salt and pepper 5 cups water

Heat drippings in skillet. Add rice and sauté until golden, stirring frequently. Stir in chopped onions and bell pepper and cook about 5 mins. Mash garlic and cumin together and add to rice. Add 1 cup water to the rice. Add tomato paste and tomatoes. Break up tomatoes.  Add salt and pepper and 4 cups water. Reduce heat cover and simmer slowly 45 mins to 1 hour, stirring occasionally. Cook until all liquid is absorbed.

The problem with people who have no vices is that generally you can be pretty sure they're going to have some pretty annoying virtues.
