Tex Mex Rice & Beans

 

James's Crawfish Sausage Beans

 

1 Cup Green Onions, Chopped 
2 Links Texas Cajun Crawfish Sausage, Diced 
2 16 oz. Cans Pinto Beans 
3 Each Poblano Chiles, Chopped but better if they are roasted 
1 Cup Tomato, Chopped 
Salt & Pepper To Taste 
Cooking Instructions:

Preheat oven to 350 degrees. 

Mix Onions with Sausage in a 2 quart casserole pan and bake for 15 minutes, Do Not Drain! Add 1 can of drained Pinto Beans, then add the other can of beans undrained. Add remaining ingredients and gently mix together. 

Bake the mixture until it begins to bubble or boil, about 35 minutes. 

Makes 6 to 8 servings
