Tex Mex Rice & Beans

Lynn's   Spanish Rice

 

5 tbs bacon drippings
1/2 med onion chopped
1 cup rice
1/2 med bell pepper chopped
1/2 tbs cumin
3 gloves garlic
1 16 oz can tomatoes chopped
salt & pepper
5 cups water
5 jalapenos chopped 
To taste; picante or other sauce 

Heat drippings in large skillet, Add rice and sauté until golden brown. Stir in onions and bell pepper 
and cook about 5 more min. Mash garlic and cumin in mortar, add to rice, add 1 cup water to rice.
Add tomatoes, salt & pepper and other 4 cups of water. Reduce heat and cover on simmer slowly for
45 min to 1 hour.
