Green, Avocado, Cranberry Vinaigrette
1/2 cup cranberry
juice cocktail
1 avocado
2 tbs salad oil
2 tbs red wine vinegar
1 small head romaine or leaf lettuce
1/2 tesp salt
1 cup fresh enoki mushrooms or sliced button mushrooms (3-1/2 ounces)
Lemon juice
1 red pepper, cut into thin bite-size strips
cucumber, thinly bias-sliced
1 head Belgian endive
. Meanwhile, rinse romaine and endive; pat dry. Line a
platter with some of the
romaine and all of the endive. Coarsely shred remaining romaine;
spread over platter. Arrange cucumber, mushrooms, red pepper, and sprouts,
if desired, on lettuce-lined platter. If desired, cover and chill for up to 24
hours.
To serve, halve, seed, peel, and thinly slice avocado, brushing slices with
lemon juice.
Add avocado to platter. Shake dressing well and serve with salad.
For
dressing, in a screw-top jar combine cranberry juice cocktail, oil, vinegar,
sugar, and salt.
Cover and shake well. Chill until serving time
El Niņo: The periodic phenomenon involving the
warming of a mass of water in the Pacific Ocean along with a weakening of the
trade winds near the equator. The movement of this warm water toward South
America causes changes in weather patterns all over the world. These changes
often have damaging effects, such as droughts in Latin America, Africa, and
Australia, and extraordinary typhoons in Polynesia. In the United States, severe
winter storms usually occur in California and the Gulf States during El Niņo
conditions.
